Curried Cauliflower

Ingredients

  • 2 tsp curry powder organic
  • 1 tsp cumin organic
  • Sea Salt & Ground Pepper to taste
  • 1/3 cup Extra Virgin Olive Oil organic
  • 1 head Cauliflower medium, cut into florets
  • 1 Red Onion chopped
  • 1 tbsp Flat-leaf Parsley finely chopped

Instructions

  • Preheat oven to 425 degrees F.
  • In a medium bowl, whisk the olive oil with curry powder, cumin, sea salt, and pepper.
  • On a baking sheet lined with parchment paper or aluminum foil, add the cauliflower and onion. Spread out with a wooden spoon and drizzle the dressing.  Mix with wooden spoon to thoroughly coat the cauliflower and onion.
  • Roast in the oven until tender and browned, approximately 40 minutes, stirring with a wooden spoon halfway through.
  • Remove from oven and add to a serving dish.  Garnish with chopped parsley and a drizzling of olive oil.

Notes

May be served warm or at room temperature.
