In a medium bowl, whisk the olive oil with curry powder, cumin, sea salt, and pepper.
On a baking sheet lined with parchment paper or aluminum foil, add the cauliflower and onion. Spread out with a wooden spoon and drizzle the dressing. Mix with wooden spoon to thoroughly coat the cauliflower and onion.
Roast in the oven until tender and browned, approximately 40 minutes, stirring with a wooden spoon halfway through.
Remove from oven and add to a serving dish. Garnish with chopped parsley and a drizzling of olive oil.
