Apricot-Quinoa Cereal

Apricots are those beautifully orange colored fruits full of beta - carotene and fiber and rich in vitamin C. Apricots are rich in antioxidants which means they protect against the damage of free radicals. Other health benefits include protection of eyesight, heart health, apricots protect against inflammation, help control blood cholesterol levels, and support healthy digestion. Ingredients

  • 1.5 cups filtered water
  • 1 cup apricot nectar
  • 1 cup chopped fresh or dried apricots
  • 1 teaspoon ground cinnamon
  • 1/2 cup gluten-free quinoa
  • 1/8 cup gluten free oats
  • 1/2 chopped walnuts
  • 1/4 cup full fat coconut milk
  • 2 tablespoons maple syrup Grade B
  • Wild blueberries or whatever you prefer for garnish

Instructions

  • In a 2 quart saucepan, bring the water, apricot nectar, apricots and cinnamon to a boil.
  • Prepare the quinoa according to package directions and add to the saucepan along with the oats.
  • Reduce heat to a simmer and partially cover and cook until the liquid is absorbed and quinoa and oats are tender, approximately 10 - 15 minutes.
  • Stir in the maple syrup and coconut milk.
  • Divide into (4) cereal bowls and top with chopped walnuts, blueberries, or whatever you like.
