bunch kale
blanched to protect the thyroid

teaspoon
sea salt
1
stalk celery
chopped

teaspoons
lemon juice
1
avocado
chopped or sliced
1
tablespoons
extra-virgin olive oil
1-2
teaspoons
fresh minced garlic
1/2
cup
chopped beets
1/4
cup
mandarin orange slices
1/4
cup
chopped walnuts
may substitute with raw pumpkin seeds
Chopped goat cheese
Instructions
Remove stems and chop kale leaves. Blanch and allow to dry; place them in a bowl.
Add salt, celery, lemon juice and toss.
Mix the avocado and olive oil in a bowl with the minced garlic and pour over the kale, mixing well.
Top salad with mandarin orange slices, beets and walnuts.
Garnish with goat cheese if desired.
