Non-Dairy Apple Parfait

Ingredients

  • 1/2 cup raw cashews
  • 1/2 cup almond or coconut milk unsweetened
  • 1/2 teaspoon vanilla gluten-free
  • 1 cup chopped apple
  • 1/3 cup rolled gluten-free oats no need to cook these
  • 1 Tablespoon hemp seeds

Instructions

  • Soak raw cashew nuts at least 20 minutes or up to 1 hour and strain
  • Combine cashews, milk and vanilla in a blender and blend until smooth (cashew cream)
  • Layer ingredients in the glasses you like to use for parfaits (or use a small glass): a dollop of cashew cream, spoonful of chopped apple
  • Garnish with oats and hemp seeds
  • Enjoy!
