Good Mood Salad

Boost emotional well-being, digestive health and immune system function with this delicious, nutritious and easy to make colorful salad.

  • 1 bunch kale blanched to protect the thyroid
  • 1 teaspoon sea salt
  • 1 stalk celery chopped
  • 2 teaspoons lemon juice
  • 1 avocado chopped or sliced
  • 1 tablespoons extra-virgin olive oil
  • 1-2 teaspoons fresh minced garlic
  • 1/2 cup chopped beets
  • 1/4 cup mandarin orange slices
  • 1/4 cup chopped walnuts may substitute with raw pumpkin seeds
  • Chopped goat cheese


  • Remove stems and chop kale leaves. Blanch and allow to dry; place them in a bowl.
  • Add salt, celery, lemon juice and toss.
  • Mix the avocado and olive oil in a bowl with the minced garlic and pour over the kale, mixing well.
  • Top salad with mandarin orange slices, beets and walnuts.
  • Garnish with goat cheese if desired.
