This is the season of amazing salads! 

Enjoy this good mood salad made with beets, mandarin oranges and more goodies from nature next time you’re feeling stressed or overwhelmed.  The beets and lemon foster positive mood, emotions, and the gallbladder, sea salt nourishes the adrenal glands, the healthy fats from avocado, extra-virgin olive oil and walnuts nourish emotional well-being and overall brain function, celery is a natural sedative and helps with water retention, and kale nourishes healthy balance of bacteria in the gut.  Garlic is well known for its powerful immune system support and also helps to cleanse the intestines.  

Make sure you blanch the kale slightly to protect the thyroid.

I’m actually addicted to this salad right now!  It’s the perfect thyroid recipe and is gluten free and dairy free.

Ingredients

  • 1 bunch kale blanched to protect the thyroid
  • 1 teaspoon sea salt
  • 1 stalk celery chopped
  • 2 teaspoons lemon juice
  • 1 avocado chopped or sliced
  • 1 tablespoons extra-virgin olive oil
  • 1-2 teaspoons fresh minced garlic
  • 1/2 cup chopped beets
  • 1/4 cup mandarin orange slices
  • 1/4 cup chopped walnuts may substitute with raw pumpkin seeds
  • Chopped goat cheese

Instructions

  • Remove stems and chop kale leaves. Blanch and allow to dry; place them in a bowl.
  • Add salt, celery, lemon juice and toss.
  • Mix the avocado and olive oil in a bowl with the minced garlic and pour over the kale, mixing well.
  • Top salad with mandarin orange slices, beets and walnuts.
  • Garnish with goat cheese if desired.
