Non-Dairy & Gluten-Free Apple Parfait
Homemade cashew cream makes this non-dairy apple parfait a delicious treat for breakfast or as a snack or dessert. Parfaits can seem intimidating to prepare but this one is really quite simple.
Ingredients
- 1/2 cup raw cashews
- 1/2 cup almond or coconut milk unsweetened
- 1/2 teaspoon vanilla gluten-free
- 1 cup chopped apple
- 1/3 cup rolled gluten-free oats no need to cook these
- 1 Tablespoon hemp seeds
Instructions
- Soak raw cashew nuts at least 20 minutes or up to 1 hour and strain
- Combine cashews, milk and vanilla in a blender and blend until smooth (cashew cream)
- Layer ingredients in the glasses you like to use for parfaits (or use a small glass): a dollop of cashew cream, spoonful of chopped apple
- Garnish with oats and hemp seeds
- Enjoy!
