Roasted Sweet Potato & Onions

HONESTLY….this recipe is out of this world delicious, and SO easy!!
Ingredients:
- 3 to 4 large sweet potatoes, chopped (or use a couple bags of frozen, organic & already chopped)
- 1 large yellow onion, chopped
- 1 Tablespoon coconut oil
- 1 teaspoon black pepper
- 1 teaspoon sea salt
- 1-1/2 teaspoon(s) curry
Directions:
Preheat oven to 400 degrees. Add the sweet potatoes, onion, coconut oil, and black pepper to a large mixing bowl. Mix well, and spread evenly onto a baking sheet. Bake for about 20 to 25 minutes. Sprinkle with sea salt and serve.
OPTIONAL: If using frozen sweet potatoes, you may simply melt coconut oil in a large skillet and add all ingredients – cook until potatoes are soft and onions are clear.
