Super Food Berry Salad w/Tarragon Lemon Dressing

Ingredients

  • 4 cups organic spring mix & spinach greens
  • 4 hard-boiled organic free-range eggs use only the yolks
  • 1 pear cored and grated
  • 1/2 head cabbage shredded & diced
  • 1 avocado chopped
  • 1/4 cup blackberries
  • 8 segments mandarin orange or tangerine

Dressing

  • 3/4 cup extra virgin olive oil
  • 1 Tablespoon lemon zest
  • 2 Tablespoons lemon juice
  • 1 large garlic clove minced
  • 2 Tablespoons chopped fresh tarragon
  • 1/2 cup Braggs apple cider vinegar
  • 1 teaspoon sea salt

Instructions

  • Prepare dressing and set aside.
  • Add mixed salad greens and grated pear to a bowl.
  • Chop vegetables and add to the bowl along with avocado, egg yolks, pear, mandarin orange and berries.
  • Toss with dressing.
  • Garnish with pomegranate arils.

Notes

This salad is one of my favorites for boosting thyroid & liver detox: improves condition of skin & hair, calms inflammation in the immune system, slims the tummy and boosts antioxidants.
