Curried Cauliflower
Cauliflower is so versatile and literally takes on various flavors. It can be mashed, roasted, grilled, steamed, slow-cooked and sauteed. My husband loves Indian-inspired dishes with grilled chicken or lamb so this dish is a regular in our household. The unique spice blend of curried cauliflower adds a warm hue which adds visual interest and an exotic taste.
This version is gluten and dairy free so give it a try! If you prefer to season the cauliflower and roast or grill it instead – that’s OK too. It’s delicious either way.
Ingredients
- 2 tsp curry powder organic
- 1 tsp cumin organic
- Sea Salt & Ground Pepper to taste
- 1/3 cup Extra Virgin Olive Oil organic
- 1 head Cauliflower medium, cut into florets
- 1 Red Onion chopped
- 1 tbsp Flat-leaf Parsley finely chopped
Instructions
- Preheat oven to 425 degrees F.
- In a medium bowl, whisk the olive oil with curry powder, cumin, sea salt, and pepper.
- On a baking sheet lined with parchment paper or aluminum foil, add the cauliflower and onion. Spread out with a wooden spoon and drizzle the dressing. Mix with wooden spoon to thoroughly coat the cauliflower and onion.
- Roast in the oven until tender and browned, approximately 40 minutes, stirring with a wooden spoon halfway through.
- Remove from oven and add to a serving dish. Garnish with chopped parsley and a drizzling of olive oil.
Notes
May be served warm or at room temperature.
