Gluten Free Cucumber Watercress Cream Cheese Tea Sandwiches
Tea sandwiches, like the ones my mom used to make only for special occasions, should be as petite and thin as possible. Serving tea sandwiches as a one-bite hors-d’oeuvre is one of my favorite ways to enjoy them. I gave my mom’s recipe a makeover with Udi’s gluten-free “Delicious Soft White” bread and almond cream cheese spread by Kite Hill. Try my yummy gluten free cucumber watercress cream cheese tea sandwiches for your next party or gathering. Hope you enjoy!
Ingredients
- 32 English cucumbers peeled and sliced thin
- 1.2 cup Watercress leaves plus a few more for garnish
- 1/2 cup radish onion or sprouts
- Chive Almond Cream Cheese Style Spread room temperature (Kite Hill brand is made with almond milk)
- 8 slices "Delicious Soft White" gluten-free sandwich bread Udi's brand
- Sea salt to taste
Instructions
- Pat the surfaces of cucumber slices to remove moisture
- Lightly toast bread slices if desired (not necessary with the brand & type of bread suggested)
- Lightly spread each bread slice with Kite Hill Almond Cream Cheese style spread (or use unsalted butter)
- Layer cucumber slices over the watercress leaves on 4 of the bread slices
- Top the cucumber with a few sprouts (if desired) and a pinch of sea salt
- Top with remaining 4 bread slices, cream cheese side-down
- Using a sharp knife, remove the crust from each sandwich
- Slice each sandwich in half on the diagonal
- If smaller portions are desired, cut each in half again
- Arrange the sandwiches on pretty plates or a tiered plate or cake stand
- Garnish each tea sandwich with a watercress leaf and serve immediately
Notes
Udi's offers a variety of gluten-free breads - be sure to look for the one that says "Delicious Soft White" for the best tea sandwich experience 🙂
