Brussels Sprouts with Bacon, Chestnuts & Cranberries

Jazzed up Brussels Sprouts & Chestnuts with pecans, and dried unsweetened cranberries are so good!

Every time I make this dish my family goes gaga over it.

French chestnuts are common in Europe and available in the US typically from September through February.

I like to use them in dishes during the holidays.

You’ll find them in the grocery section in the canned aisle; however, chestnuts are usually packaged in a clear glass jar.

Brussels Sprouts & Chestnuts goes very well with turkey and chicken.

  • Preheat oven to 350 degrees F. and line a baking sheet with parchment paper.
  • Place the Brussels sprouts in a large bowl and drizzle with oil.  Add the diced bacon, pecans and whole chestnuts. Toss well and transfer to the baking sheet and sprinkle with salt and pepper.  Roast for 40 minutes.
  • Remove from oven and top with dried unsweetened cranberries.

Notes

Vegetarians & Vegans:  Omit bacon or use coconut bacon.
More Carbs:  Add chopped sweet potato or butternut squash.
Nut-Free:  Top with toasted pumpkin seeds instead of pecans.
Leftovers:  Keeps well for 3 to 4 days in the fridge.
